The peculiarities of mineralization of protein-mineral concentrates prepared by virtue of electrophysical treatment of whey are determined. The conditions and possible mechanisms, which influence the formation of protein concentrates, are analyzed on the basis of the experimental data related to the pH variation, the quantity of the recovered protein, and Ca:P ratio for various current densities. The correlation between the protein content in the protein-mineral concentrate and the degree of its mineralization by the main ash elements is found. This is necessary for determination of the recovery mechanism of the whey proteins at electrophysical treatment.
